Our mini Banana Nut loaves weight approximately 3.3 ozs. The beauty to the mini loaves is you can eat all of it at once! They will freeze up to 6 months if lightly wrapped. You can warm them up in the microwave for about eight seconds, cut in half and add a little butter or cream cheese!Pineapple

They can be frozen the same way you can freeze pecan pie to extend shelf life. To unthaw, simply let the tassies sit at room temperature. I remember when I first started cooking this, I used the soft, medium, or hard stage ball procedure. I always said a prayer hoping that it would turn out okay and not e sticky- which would mean under cooked or it would turn to sugar, which would have made it way over cooked. I now use a candy thermometer and every batch turns out the same. Once my brittle has reached the correct temperature, I pour it out and use a special rolling pin to thin it out.Pecan Brittle
